Old-Fashioned Zucchini Pie

This pie is the ultimate savory side dish! A beautiful blend of rich flavors and a fun way to utilize a bountiful zucchini harvest from your summer garden.

Old-Fashioned Zucchini Pie

Ingredients:

1 pie crust (homemade or store-bought)

1/4 c. butter

4 c. sliced zucchini 

1/4 c. chopped white or yellow onion

2 tbsp dried parsley

1/2 tsp salt

1/2 tsp pepper

1/4 tsp oregano

2 c. shredded mozzarella

2 large eggs lightly beaten

Directions:

1.) Preheat oven to 375 degrees Fahrenheit. Press crust into round pie dish.

2.) Melt butter over medium heat. Add zucchini and onion and cook til tender. Add seasonings. Allow mixture to cool slightly, then mix in cheese and egg.

3.) Pour mixture into crust.

4.) Bake at 10 minute intervals until done. 

We recommend serving this with a green salad and either pasture-raised steak or chuck roast to create a wonderful farm-to-table meal!
